Some of our favorite breakfast dishes!
Spinach, Onion, Celery, Mushrooms, small Peppers sliced lengthwise
Your choice of Breakfast meat, cooked. (Sausage link is shown).
1 large egg, Dill weed, Salt and Pepper
1 tsp. Butter or Olive Oil for pan
2 Tbsp. Feta cheese (or any cheese of your choosing.) 1 Tbsp. Shredded Jack or Cheddar for top.
Cook Link Sausage, Bacon or diced ham (I cook the sliced peppers in the same pan, till wilted and seared).
Wilt approx. 1/2 C. Spinach, set aside
Saute Onions, Celery and Mushrooms, set aside
Whisk 1 egg with the Dill and 2-3 Tbsp. water
Heat Omelet pan, on Medium +, with 1 tsp. butter or olive oil
When pan is hot pour whisked egg into it. Add the spinach, saute'd veggies and sprinkle the Feta Cheese over it. If you want to add the sausage link, bacon crumbles or diced ham, do it, now. Try to keep these ingredients on less than half the pan, opposite the handle side, so you can flip and then slide the Omelet out of the pan when it's set.
Using a silicon spatula gently lift and flip the egg-only side of the Omelet onto the veggie/cheese side. Top with the seared peppers and sprinkle with the shredded cheese. Cover for 1 minute to melt the cheese and finish cooking.
Carefully slide the Omelet onto the plate. You can serve the sausage or bacon on the side if, preferred.
